Pod
Carob
Ceratonia siliqua
A Mediterranean evergreen, also called locust bean or St John's bean. The pulp inside the ripe pods is roasted and ground. The powder is naturally sweet and a little toasty, and it has no caffeine. Bakers use it where a recipe might otherwise call for cocoa.
In the kitchen
Mix the powder into cakes, desserts, and drinks. It is sweet and toasty on its own, and dry if you eat the powder straight, so it wants company. People use it where a recipe calls for cocoa.
